Our smoked string cheese adds a wonderful flavor to most recipes calling for a smoked cheese. We adapted this recipe from the Whole Foods Market Cookbook . It combines our delicious smoked string cheese with spinach and roasted peppers. It’s perfect for vegetarians. However, if you want to add some seafood or protein, we suggest grilled shrimp or grilled chicken. We love to serve this refreshing dish while dining al fresco on a warm summer evening.
1/4 cup grated parmesan cheese
1/2 cup chopped fresh parsley
1/2 cup mayonnaise
1/4 cup white wine vinegar
3 garlic cloves, minced
1 pinch cayenne pepper
salt & fresh ground pepper, to taste
12 oz penne pasta
3 cups packed baby spinach leaves, washed and stemmed
2 large roasted red peppers, diced ( one 12 oz jar will be fine if you do not want to roast your own )
4-6 oz smoked Sun-Ni String Cheese, sliced
1. Process the dressing ingredients in food processor or blender until smooth.
2. Cook pasta until al dente. Drain pasta in colander and run under cold water until well-cooled.
3. In a large bowl, combine cooked pasta, spinach, roasted red peppers and smoked string cheese.
